The sauce combines soy sauce and butter into an umami-rich emulsion using reserved pasta cooking water. Begin with a pot of boiling water and set aside a bit of the pasta water before draining. Sauté a trio of mushrooms until they brown, season with salt and pepper, then push them aside and add soy and butter. Emulsify the sauce with pasta water and toss with spaghetti. Plate and finish with sliced scallions and shredded nori.
