Chef Dhanapol “Oak” Marprasert channels his Thai upbringing and his mother’s influence into a cuisine that balances street classics with contemporary interpretations. Born into a Thai army attaché family and trained in Bangkok culinary school, he returned to the U.S., worked his way up from dishwasher in Tennessee, and moved to New York to reach a broader audience. He and his wife Jiraporn launched Makin in 2020 and later Astoria’s Kam Rai Thai, serving coconut-rich regional dishes like Khoa Soi Gai Confit. The new Time Out Market location marks Kam Rai Thai’s expansion within Manhattan.
