Fidel Caballero opened Corima in January 2024 and earned a Michelin star, a James Beard semifinalist nod, and a spot on Best New Restaurants of 2024. Caballero plans to open Vato in Brooklyn in November, combining nostalgic Chihuahua flavors—tortillerías, burritos, and family tastes—with techniques and dining culture from the Basque Country. The fall openings list also highlights Roxie's in Buda, Texas, a Southern comfort restaurant from the Salt Lick family featuring pimento cheese, chicken-fried steak, deviled eggs with fried chicken bites, lard-crust pies, and frozen peach bellinis.
