Beachwood Pizza and Beer will run a limited-time menu at its Huntington Beach location from Oct. 23 to Nov. 2 featuring three dishes inspired by John Ash's From Earth to Table cookbook. The menu additions include the Earth To Table Sourdough Pizza with béchamel, mozzarella, Dutch brie, Canadian bacon, portabella mushroom and caramelized onions; a wine-braised chicken orecchiette; and a peach dessert. Head chef Ashley Arias adapted Ash's seasonal ingredient approach to create new flavor combinations. John Ash, who died at 83 in August, was a pioneer of sustainable, seasonal Wine Country cuisine and founded John Ash & Co. Owner Gabriel Gordon cited Ash as a major influence on his culinary development.
