"Described as a "love letter to French fine dining," the burger starts with an A5 Wagyu house-ground patty, seared to a perfect medium rare. It is then topped with a 13-year-aged white cheddar, a slow-braised compote of caramelized sweet onions with Herbes de Provence, and the pièce de résistance, a quenelle of truffle sturgeon caviar. But before you take a bite of the house-baked brioche bun, swiped generously with roasted bone"
Mark Mendaros helped drive a burger revolution in New York through Smashed NYC, known for caramelized, seared, and smashed patties. During the pandemic, burger stands expanded across the city, including locations at Time Out Market New York in Dumbo and Union Square. For May’s BurgerMonth, Mendaros offers limited-time burgers at Smashed Express at Time Out Market New York, Union Square, and at Mendaros. The birria burger costs $18 and uses slow-braised beef in a rich adobo of dried chilies, garlic, and Mexican spices, layered over two smashed patties with salsa verde and red pickled onions, with braising liquid served as consommé. The sovereign smash costs $35 and features an A5 Wagyu patty, 13-year-aged white cheddar, caramelized sweet onion compote with Herbes de Provence, and a quenelle of truffle sturgeon caviar on a house-baked brioche bun.
