Rare has a nice selection of cuts from around the world, and the best way to sample them is the New York strip tasting ($180), which is three three-ounce cuts: Kansas-based Creekstone Farms prime, American wagyu, and Japanese wagyu. The mighty 16-ounce boneless grass-fed rib-eye, also from Creekstone, cooked to order (we suggest medium rare), and a very nice cut ($82).
