One of the reasons I love this particular recipe is because it bends the rules, allowing you to fill your onion with whatever you please. In this instance I've gone for crab meat, but you could go for any favorite, as long as it holds together with the rice.
Begin by sautéing the onion and garlic until translucent, then adding brown crab meat and caramelizing it for roughly 10 minutes. Add spices, white wine, tomatoes, and cook down to a thick sauce. Season and set aside to cool.
