"Toum Grilled Cheese Cheese manakeesh, a topped flatbread found throughout the Levant, is delicious with toum, a sauce made by combining garlic, lemon juice, salt and oil. This grilled cheese hits those notes, skipping a trip to the bakery. Hey, Ham, what are you making? I'm making toum grilled cheese. Toum grilled cheese is based off of my favorite, favorite snack, which is a Lebanese akkawi cheese manakish. My favorite condiment for that is toum."
"Muenster, I feel is the superior melting grilled cheese. So a big part of manakish as well, there are these wild cucumber pickles and turnip pickles. I'm mimicking that with some cornichons that I sliced thinly. So I got my fluffy toum. I'm going to spread it on one side of the bread. I'm not toum-ing both sides of my sandwich quite yet. Makes it less of a mess this way."
Cheese manakeesh, a topped flatbread from the Levant, pairs well with toum, a sauce of garlic, lemon juice, salt and oil. The grilled cheese adapts those flavors by using melty Muenster and slices of akkawi-style cheese or similar. Pickles provide briny contrast; thinly sliced cornichons mimic wild cucumber and turnip pickles. Fluffy toum is spread on one slice of bread to limit mess. The sandwich is pressed while cooking to compress and transfer heat to the center, flipped when the bottom is golden, then finished on a rack to preserve crispness. An extra smear of toum adds a bright hit.
