Not that long ago, restaurant chains like Cava, Chipotle and Sweetgreen had lines streaming out of their doors at lunchtime. But last year, traffic and sales at many of them softened considerably, and their stock prices plunged. Still, don't look for this restaurant segment to slash menu prices any time soon. It's simply not part of its DNA, some restaurant analysts say.
You may not have realized it, but the chicken sandwich battle is so 2019; the new chicken trend in restaurants is tenders. In the past year KFC, McDonald's, and Wendy's have all rolled out new or improved chicken tenders. But when it comes to fast food chicken tenders, Raising Cane's and Zaxby's loom largest because both chains have made their names on them from the start.
The functional beverage revolution isn't coming to the food and beverage industry-it's already here. With the functional beverage market projected to reach $50 billion by 2025 and growing at 4.5% annually, restaurant operators have an unprecedented opportunity to dramatically increase profitability. The math is compelling: for a 100-unit chain, increasing beverage incidence by just one percentage point can yield over $500,000 in incremental profits annually.
Menus are dominated by familiar favorites like goat cheese salad and avocado toast, leading to an acceptance of less culinary variety. Chef David Chang popularized Brussels sprouts, transforming them into a menu staple across various restaurants.
