"This is the Hilton-owned Waldorf Astoria's first resort in the Lone Star State. Slated to open in early 2027 in the heart of Texas Hill Country, known for its picturesque farms and booming wine industry, the luxury resort will feature 60 hotel guest rooms and suites, plus 37 multi-bedroom resort villas and 50 private residences. According to a news release, there will be five food and beverage concepts, including an all-day restaurant, a specialty restaurant, and a bar and lounge."
"Crenn told Texas Monthly that her dining concept, which will be on the second floor of the Waldorf Astoria's main building, will be inspired by Fredericksburg's agricultural roots and the town's contemporary food and beverage community. She's already visited with regional farmers to discuss local ingredient sourcing. "I drive around, fantasizing about buying a little house somewhere," she told the outlet."
"Crenn doesn't serve meat at her flagship Atelier Crenn - the tasting menus are exclusively vegetarian and pescatarian - but she does plan to offer it on the Texas menu, which will be a la carte, at least in the beginning, she told Texas Monthly. "It's important to make sure that it's very inclusive to anyone who will walk in the door," she said."
