People like the comfort of ordering something they know, and are pleasantly surprised when they get it and the texture is just that of a classic Margarita, since we aren't using any coconut cream or anything; it's just tropical and refreshing.
This summery tequila sour from Mel Tate, bartender at Dovetail in New Orleans, is named after a Marvin Gaye song. In it, strawberry syrup comes together with bright citrus, rich orgeat and Amaro Sfumato Rabarbaro, which lends a subtly smoky flavor and added depth to the cocktail.
